Cheese Pie, aka Quiche

Tasty and adaptable. Very rich.
Uses: Good with a salad for brunch/lunch/dinner.
Tips: Great make-ahead food.

Ingredients
1 Basic Single Piecrust see: Basic Single Pie Crust.
2 slices of Cheddar cheese, 1/4" thick
3 eggs
2 Tab flour
1 Cup 1/2 and 1/2
1/2 tea salt
pepper to taste
4 pieces cooked and diced bacon
4 oz Gruyere cheese, shredded

Options: different cheese, 1 cup of pre-cooked chopped veggies, carmelized onions, marianated artichokes, sundried tomatoes, ham, shrimp, etc.

Pre-heat oven to 375. While crust is baking, assemble the filling.
Crust: Make the Basic Single Pie Crust recipe, but don't cut away the edges. When the piecrust has reached the Hot Pie stage, cut Cheddar Cheese slices to fit on the bottom of pie crust.
Filling: Mix the rest of the ingredients in a large bowl. Pour into warm piecrust. Bake 30-40 minutes until a knife inserted into the middle comes out clean, and the top is puffy and golden brown.
