Isicia Chicken Meatballs

Sweet, meaty and different.
Uses: Kids love them, potluck winner.
Tip: Make a lot, they go fast. Reduce the pepper for milder balls.

Sauce:
1/2 cup chicken broth
1/2 cup honey
1 tsp salt
1/4 tsp dried ginger
1/2 tsp pepper

Meatballs:
1 pound chicken--either ground dark meat or boneless/skinless thighs.
1/2 tsp pepper
1/2 tsp salt
1 tsp ground cumin
1/2 tsp celery seed
1 tsp dried oregano

Sauce: In a large pot or dutch oven, mix ingredients and bring to a simmer over medium-low. While warming, make the meatballs.

Meatballs: If you have whole thighs, grind them in the Cuisinart and add the spices. If you have ground chicken, just add the spices. Mix well and with wet hands, form walnut-sized balls and drop them in the simmering broth. Reduce to medium-low and cover. Cook 15 minutes, stir and cook 15 more.

Adapted from an ancient roman recipe.
