Namasu Cucumbers

Japanese style cucumber slices, cool and fun.
Uses: Side dish with all Asian food.

Tips: Use English cukes, they don't need seeding. A mandoline slicer makes fun shapes. Best when eaten immediately.

1 1/2 cucumbers, seeded if needed, sliced into coins
1/2 tea salt
1 tsp minced ginger
1/4 cup rice vinegar
2 Tab sugar

Mix cukes and salt in a colander and let drain for 15 mins.
Shake ginger, vinegar and sugar in a pint jar with lid. Put cukes in a bowl and toss with ginger mixture.

How to seed a cucumber: peel and slice lengthwise into quarters. Stand quarter on end and slide the knife down between the pith and the gelatinous seed section.
